Angle Luffa

Angle Luffa is a type of gourd with well-defined ridges. Its taste and texture resembles zucchini or courgettes, though luffa has the superior quality at retaining its juiciness. For consumption, Luffa is only harvested when young. If left to mature, the network of fibres can become so dense that the pulp can be turned into cleaning scrubs when dried! Even though it is not very attractive in looks, this extremely succulant Asia-Zucchini is extremely versatile. Once peeled, it can be added to stir-fry, steamed, braised, stewed, roasted or baked. Since it is great at sopping up the sauce when cooking, a touch of crushed garlic and thinly sliced capsicum chillies can really bring out the flavour of the dish.
