Eggplant Long

Eggplant green, also called Makhuea Yao, is usually 10-12 inches long with subtle sweet flavour and few seeds if picked early. The mild and tender flesh makes them ideal for stir-fry and curry dishes as they are good at absorbing rich flavours.
