Bitter Melon

Bitter melon or bitter gourd, as its name suggests, is the most bitter fruits available. The bitterness stems from a chemical compound called Momodicine, which helps to stimulate appetite and improves the function of digestive system. The fruit has a natural laxative effects, is known to help diabetics lower their blood sugar levels, and can boost the immune system in the fight against cancer. Thais ofter eat Bitter melon raw with chilli paste, or stuffed with mince pork in the centre and cooked in a clear broth called Tom Cheut Mara.
