Papaya Green

Cooking or unripe papaya has a dark green skin that must be peeled away to reveal the crunchy, light green flesh inside. The fruit is very low in calories (just 39 calories/100 g), contains no cholesterol, and is a rich source of phytonutrients, minerals, and vitamins. Unripe papaya can be kept at room temperature for a few days, and up to two weeks if stored at 7-10 degrees Celsius. The fruit can be eaten raw and is the most important component in the world famous “Som Tam”, a spicy Thai papaya salad. Cooking papaya can also appear in various dishes including stew, stir-fry, curries and soup.
