Soy Bean

Soybeans (Edamame) are harvested when the pods are still an immature green, prior to any yellowing of the pod. Once the pod turns yellow, the quality and flavor of the soybean is compromised. Pods of soybean are usually boiled and seeds are eaten as a snack with salt. Soybean is a complete protein, and soyfoods are rich in vitamins and minerals including folate, potassium and, in some cases, fiber. Most soyfoods are also low in saturated and trans fats, one reason why the American Heart Association has recognized soyfoods’ role in an overall heart-healthy diet.
